  • 3 eggs
  • 1 onion
  • 1 leek
  • bacon rashers
  • shortcrust pastry sheet
  • vegetable oil
  • salt
  • black pepper


  1. Pre heat the oven to 180c / 160c fan or gas mark 4.
  2. Dice the bacon and pre-cook either grill or fry, chop the onion and leak then place together in a pan with a small amount of oil to cook until soft.
  3. If using pastry, fill the muffin tray with the shortcrust pressing the pastry against the edges of each muffin case.
  4. Take the bacon, onion and leak evenly spoon the mixture inside each muffin case. Put one egg in each case breaking the yolk and gently mixing each egg in.
  5. Grate the cheese and sprinkle it equally over the top of your eggs, adding salt and pepper to taste.
  6. Place in the oven until the egg is cooked, puffed up and golden.
