Meringues are one of our flour-free favourites to get us through these flourless lockdown days without compromising on flavour, taste or texture. To make your meringue, preheat your oven to 120°C/250F/ gas 1. Then separate four eggs and beat the whites into stiff peaks. Next, add one cup of caster sugar, a little at a time. Once all the sugar has been added, the mixture should be shiny and smooth. You can then spoon it onto a lined baking tray and put it in your preheated oven for around an hour and a half. Once the meringue has been baked, turn the oven off and allow to cool completely. Serve your meringue with whipped cream and fresh fruit for an irresistible dessert.
