  • 2 lemons
  • 200g caster sugar
  • 300ml double cream


  1. Turn the hob onto a low heat, pour in the double cream into a saucepan, add in the sugar, and bring to the boil.
  2. Zest the lemons into the pan before cutting the lemons in half and squeeze the juice from the lemon ensuring no seeds fall into the pot simmering for 3 minutes.
  3. Whisk the mixture before taking off the boil, pour into your chosen pots and refrigerate on the bottom shelf for 45 minutes – 1hour and serve with fresh fruit or shortbread biscuits.
