Ingredients
- 2 lemons
- 200g caster sugar
- 300ml double cream
Instructions
- Turn the hob onto a low heat, pour in the double cream into a saucepan, add in the sugar, and bring to the boil.
- Zest the lemons into the pan before cutting the lemons in half and squeeze the juice from the lemon ensuring no seeds fall into the pot simmering for 3 minutes.
- Whisk the mixture before taking off the boil, pour into your chosen pots and refrigerate on the bottom shelf for 45 minutes – 1hour and serve with fresh fruit or shortbread biscuits.
