A quick and easy to follow recipe requiring a minimum number of dishes and no flour! This delicious and simple cake is perfect for a birthday party, holiday, or any day that you want a sweet treat!

  • 150ml olive oil
  • 50g cocoa powder
  • 3 eggs
  • 150g ground almonds
  • 200g caster sugar
  • ½ tsp bicarbonate of soda
  • 125ml boiling water
  • icing sugar
  • a pinch of salt


  1. Preheat the oven to 170c / 150c fan or gas mark 3 and lightly grease your cake tin.
  2. Place the caster sugar, olive oil and eggs together in a bowl or your mixer and mix together for 3 minutes.
  3. Take the cocoa powder, boiling water and mix together in a bowl and whisk to create a chocolaty paste then pour the cocoa powder mixture in with the sugar, oil and eggs mix and whisk together.
  4. Add the ground almonds, salt and bicarbonate of soda folding into the mixture. Pour into the cake tin and place in the oven for 40 – 50 minutes.
  5. Dust with icing sugar to finish. Fruit, cream or ice cream can be used to serve.
