  • 100g strawberries
  • Pimms and elderflower
  • 100g caster sugar
  • 1 pot whipped cream
  • 2 tbsp’s icing sugar
  • 1 tsp vanilla extract
  • 3 meringue nests


  1. Heat the saucepan on low.
  2. Take the leaf and stems off each strawberry, place the strawberries, caster sugar and pimms with elderflower into the saucepan, cooking over a low heat.
  3. Pour the cream, icing sugar and vanilla paste into a mixing bowl and whisk together until thickened.
  4. Once all the sugar has dissolved, turn the heat up to let the strawberry jam bubble until it reaches the temperature of 105c. Once there turn off the heat and leave to set (jam must be completely cool before use).
  5. Take the meringue nests and smash them in with the whisked cream and mix together.
  6. Once the strawberry mixture has cooled it will have a jam like consistency, in a bowl pour the cream meringue mixture followed by adding the strawberry jam, layering between cream meringue and jam to taste.
  7. Serve and enjoy.
