  • 5 tbsp’s all-purpose flour
  • 2 tbsp’s corn flour
  • Half tbsp baking powder
  • lemon zest
  • 3 cups water
  • 2 cups peas
  • 1 fellet fresh fish
  • 1 tbsp melted butter


  1. In a mixing bowl add the plain flour, corn flour and baking powder, take the water and slowly pour into the bowl while continually whisking the mixture, adding more water until it makes the consistency of custard. (for a lighter batter add more water, add your optional spices or lemon now)
  2. Take fresh fish dust it lightly in plain flour before placing it in the batter mixture ensuring it is completely covered.
  3. Place the battered fish into the fryer on 180c heat, cooking one side for 3 – 5 minutes before turning the fish over and cooking again until the batter is golden and crispy (Ensure your fish is cooked throughout)
  4. To make the minted peas, take the fresh mint and rub it between the palm of your hands, place a small amount of butter and the mint into the microwavable bowl/bag.
  5. Spoon out the peas into the bowl/bag, mash the peas. Take the remainder of the mint out of the bowl/bag, pop into the microwave for 2 – 4 minutes.
  6. Plate up and serve.
