Ingredients
- 1 avocado
- 2 eggs
- 1 red onion
- 1 tomato
- fresh coriander
- lime juice
- chilli
- white wine vinegar
- knob of butter
- 2 slices of bread
Instructions
- Cut the avocado in half, remove the seed. Slice the avocado in quarters, peel the skin before chopping the avocado into small squares, put the chopped avocado into a bowl to crush using the back of a fork.
- Dice the onion, tomato, coriander and chilli before adding it to the avocado mix. Squeeze a small amount of lime juice into the bowl with a pinch of salt and pepper to season stirring in.
- In a saucepan, bring to the water to the boil with white wine vinegar, crack the egg whole in the pan to boil for 3 – 5 minutes to poach.
- Pop the bread into the toaster and toast to preference butter as desired, once poached remove the eggs and place onto the cloth to absorb the excess water.
- Spoon the avocado mix on top of the toast, place the poached eggs on the side of the plate to finish.
