- 1 punnet mushrooms
- 1 onion
- 45g rice
- 2 eggs.
- Garlic & oregano to taste
- Fry mushrooms & onion in oil, garlic & oregano.
- Cook rice in a separate pan and then drain and combine the ingredients.
- Add the raw eggs and stir continuously until cooked.
- Perfect served alongside a curry or on its own with fresh basil.
