Lentil Bolognese

Ingredients:

  • 100g lentils
  • 1 onion
  • 1/2 punnet mushrooms
  • 1 red pepper
    200ml vegetable stock
  • 1 tin chopped tomatoes
  • 1 tsp tomato purée
  • Fresh basil
  • Spaghetti

Method:

  1. Boil the red lentils in water until softened.
  2. In a separate pan, fry an onion with garlic. Addmushrooms & red pepper.
  3. Once browned, add the lentils and vegetable stock.
  4. Cook until reduced and add chopped tomatoes andtomato purée.
  5. Serve with fresh basil & spaghetti.
