Coconut Lentil Dahl

Ingredients
1 Onion
2 Cups Red Lentils
150ml Vegetable stock
1 Can Coconut Milk
Garlic, Ginger, Turmeric, Coriander & Chilli to taste

 

Method:

  1. Fry onion with garlic & ginger, once browned add turmeric, chilli & coriander. SauteĢ in vegetable stock until reduced.
  2. Add red lentils & gradually add the coconut milk. Simmer for 20-25 minutes until sauce has reduced and lentils have cooked through.
  3. Serve with rice.
