Coconut Lentil Dahl

Ingredients:

  • 1 onion
  • 2 cups red lentils
  • 150ml vegetable stock
  • 1 can coconut milk
  • Garlic, ginger, turmeric, coriander & chilli to taste

Method:

  1. Fry onion with garlic & ginger, once browned add turmeric, chilli & coriander. Sauté in vegetable stock until reduced.
  2. Add red lentils & gradually add the coconut milk. Simmer for 20-25 minutes until sauce has reduced and lentils have cooked through.
  3. Serve with rice.
