Ingredients |

1 Onion |
2 Cups Red Lentils |
150ml Vegetable stock |
1 Can Coconut Milk |
Garlic, Ginger, Turmeric, Coriander & Chilli to taste |
Method:
- Fry onion with garlic & ginger, once browned add turmeric, chilli & coriander. SauteĢ in vegetable stock until reduced.
- Add red lentils & gradually add the coconut milk. Simmer for 20-25 minutes until sauce has reduced and lentils have cooked through.
- Serve with rice.
