|2 Cups Red Lentils|
|150ml Vegetable stock|
|1 Can Coconut Milk|
|Garlic, Ginger, Turmeric, Coriander & Chilli to taste|
- Fry onion with garlic & ginger, once browned add turmeric, chilli & coriander. Sauté in vegetable stock until reduced.
- Add red lentils & gradually add the coconut milk. Simmer for 20-25 minutes until sauce has reduced and lentils have cooked through.
- Serve with rice.
